My Dad with 6 pans of pancakes on the go!

Saturday morning and I felt like cooking something for breakfast other than the usual cereal (my children really do love cereals! They have week day ones and weekend ones and ones for before bed. Huge problems if we ever run out of milk in this house!) So this morning was pancakes. I am sure there are hundreds of pancake recipes out there but I've gone with my Reader's Digest recipe book. My Dad gave me the book years and years ago and it's still a go to for so many recipes. And as my Dad is the king at pancake making thought this is the best one for today.

The recipe is very straightforward - 100g flour and a pinch of salt sifted together. 3 eggs and 250ml of milk mixed and added to the flour. Beat that until you have a runny batter - and my Dad says a few lumps wont make a difference so I go with that theory :-) Ideally you would then like to chill the mixture for at least an hour in the fridge but as I had 5 minutes I skipped that part.

Normally the first one or 2 or even 3 pancakes don't work that well but we were in luck today! First one was as good as the last! This recipe made 8 pancakes, so just enough for the family. We had great fun flipping - mine were sedate little flips but my husband got right into it :-). Video of which can be found on facebook - https://www.facebook.com/Food-and-being-a-mum-1893352664328685/

Everyone has a favourite filling - for sweet mine is cinnamon sugar with a bit of lemon juice and savoury is spinach and cheese. A loves chocolate spread with cinnamon sugar...anything sweet really. C had one but then decided she was full - only to have space a few hours later for sushi!

Let me know which filling you like best, or if there's a new combination I've not yet tried. Shrove Tuesday is around the corner so we will be making more pancakes then. Oh and has anyone make pancakes with gram (chickpea) flour? My first batch were a failure - far too bitter!
