Coconut and Courgette?
Half term is well and truly over! While we were in it there was a constant query from the children of "can we have snacks?" regardless of the time of day or what had just been eaten! But somehow we got through it (wonderful having my mum visiting, made such a difference!) and now we're back into the school routine. With that though we are back to the packed lunch and after school snack dilemmas! Tuesday I sent him in with some of our go to sweetcorn drop scones and another granola bar I made on Monday.
While cooking dinner I decided to try and bake something for A to take in, and maybe even for C for an after school snack. Now, I'm more than happy to follow a recipe, and even play around with the recipe changing a few ingredients but not making it all up. Today though I decided to make it all up, using what I've learn from previous recipes. Out came half a courgette and some coconut - was going to be a cake but instead came out as cookies! Here's the recipe
Coconut and courgette cookies
Heat oven to 180C
Ingredients
100g self raising flour
15g coconut flour
50g butter, beaten
1egg
1/2 courgette, finely grated
1t honey (optional)
15g desiccated coconut
icing sugar (optional)
Method:
Sieve the flours together. Beat the butter and egg together and add in the courgette. Pour into the flours and add honey if using (not essential, I just wanted a bit of sweetness for A). Add some coconut and mix into a dough. Roll into balls and bake on a buttered tray for 10-12 minutes. Roll in icing sugar if you'd like, they taste good either way!
A loved them (thank goodness!!) but C didn't...
